These are a protein and nutrient-packed dessert!
TikTok has made it so easy for me to find amazing and delicious recipes that are also healthy! I enjoy scrolling all day, liking, sharing, and saving recipes. During my daily dose of TikTok scrolling, I came across a recipe by
Valentina Mussi, edible chickpea cookie dough. Now, she wasn't the only one who had posted this recipe, but she was the first person I came across, so I used her recipe and adjusted it to my liking. Although it tasted good the first time I made it, the chickpeas threw the texture off for me just a bit, but that's just because I'm not that big of a cookie dough fan anyway, not even the regular butter and heat-treated flour recipes. (unless it's in ice cream) But the flavor overall was good. The second time, though, when I used mini chocolate chips rather than large chocolate chunks, I fell in love with the cookie dough balls.
After I made it, I decided to experiment and see what would happen if I put it in the oven to bake, so I took a ramekin, scooped a little bit of the dough into it, and put it in the oven for 10 minutes. When I took it out, I was pleasantly surprised. The flavor was delicious, and the texture was on point.
So I threw half the batch in, let it bake for 10 to 15 minutes at 350 degrees, then took them out, flattened them with the back of a spoon, and sprinkled them with flaky sea salt. The ingredients for the cookie dough and the cookies are the same, but to help with the texture and the baking, you just have to add one teaspoon of baking soda if you move forward and turn them into cookies.

Ingredients:
- 1 cup chickpeas (You can use canned chickpeas; I chose to boil my own)
- 3 - 5 tablespoons maple syrup
- 2 tablespoons nut butter of choice (I used almond butter because it is the most flavor neutral, but depending on your taste preference, use whatever you want)
- 1 cup oat flour and/or almond flour (this is also up to pick, I ended up using both)
- Cinnamon (to taste)
- A pinch of salt
- 1/2 cup to 1 cup chocolate chips (Go as crazy as you want)
- 1 tsp baking soda (for cookies only)
- Vanilla essence (optional, along with any other toppings you would like, i.e., crushed walnuts, coconut flakes)
Procedure:
- Blend up your chickpeas in a food processor or blender along with the maple syrup and your nut butter.
- After it comes to a creamy consistency, add the flour, cinnamon, salt, and vanilla.
- Once it's blended well, pour it into a bowl and fold in your chocolate chips and other toppings of choice.
- Roll into even-size balls.
- Should you choose to bake them, add one teaspoon of baking soda before rolling them into balls
- Bake in the oven for 7 to 12 minutes at 350°F
- when they come out, they will be a bit soft to the touch and hard to handle, but just press them down with a spoon to give them a nice crispiness and shape, and enjoy them after they've cooled
If you like them under-done, it is totally safe to eat them half-baked (I enjoy them that way), but if you want them to be a little crispier and chewier, then bake them for longer.
